The classic pairing of proscuitto and melon gets a new twist with this no-cook soup and sandwich combination. Using chilled melons means you don't have to refrigerate the soup before serving.
SERVES: 6
PREP TIME: 20 Minutes
COOK TIME: 5 Minutes
Ingredients

2 baguettes
2 8-ounce balls fresh mozzarella, thickly sliced
1/2 pound sliced prosciutto
2 tablespoons extra-virgin olive oil
1 & 1/2 cantaloupes, chilled, cut in half, and seeded
Kosher salt and pepper
16 fresh mint leaves, thinly sliced

Directions
Step 1  Step 1:
Cut each baguette in half lengthwise, then in thirds crosswise.
 
Step 2  Step 2:
Layer the mozzarella and prosciutto on the bottom of each baguette portion. Drizzle with the oil and sandwich with the baguette tops; set aside.
 
Step 3  Step 3:
In a blender, puree the cantaloupe and 1/2 teaspoon salt. Pour into bowls and sprinkle with 1/4 teaspoon pepper and the mint. Serve with the sandwiches.
